| How it all started in the 90's... | ||
| The concept of "The Roasted Bean MicroRoastery" had its birth as i sat on a burlap bag of green coffee, somewhere in San Francisco, sipping the best cup of coffee I had ever tasted. I was at a coffee roastery, where hard green beans are roasted into the delicate coffee-bean as most of us know it. And the secret of the coffee's greatness was that it was roasted just the previous day - I never realized what a difference freshness can make in coffee!! |

| But very few people have the privilege to live next-door to a roastery, and I quickly learned that the "window" of fresh taste is no more than three weeks after roasting -- far too short for regular retail stores and coffee bars to manage with their purchase and inventory cycle, even for one variety, let alone for a variety of coffees.
All of this and more we pondered on that inspiring bag of green beans in San Francisco. It was then and there that we decided to start our own business to solve that very supply problem, and allow my customers to enjoy truly fresh coffee. We opened our first roastery/coffee bar in Plantation, Florida, in 1993. We now have three locations in South Florida, each of which roasts many pounds daily for in-store use . |

Roasting for the web since 1998Then customers that left the South Florida area kept calling us to ship them their coffees - they got used to FRESH and could not go "back". So in 1998 we set up our web site as a convenience to them (and saving us taking notes while driving or serving customers) .Little did we know what that started - we now have mail-order customers all over the country. The Bean experience has been fun, educational and rewarding; and we're glad you are here to share it.

| So what is a MicroRoastery?! | ||
|
The short answer: use modern technology to roast on location in quantities as little as one pound to always ensure freshness. The long answer is found in chemistry. Green beans are individually sealed units and have a shelf life of at least 3 years. Roasted beans, on the contrary, are a highly perishable product . Roasting heats the aromatic oils and flavors in the beans cellular structure to the point that they burst through the protective cell membranes, making them available for that great cup-a-Joe. But it also exposes them to the destructive effect of moisture and oxygen. Carefully stored, whole, fresh roasted beans keep their full flavor for up to 4 weeks and than start to lose flavor (stale) gradually - ground coffee stales even faster.In 1993 we started with one small scale drum-roaster but eventually had to turn to highly technical, computer-controlled "fluidized bed" roasters to really be able to roast to a customer's order. Now we have these sophisticated roasters in all of our retail locations, and roast and blend more than twenty of the best coffees in the world. |

Roasts in our stores are never more than a few days old, and often from the same day. But we still only roast some ten coffees "for the bin"; the slow-movers are roasted to order while the customer is waiting.

| Customers notice the fresh roast flavor in our drinks, and reward us accordingly: we won the "Best Coffee / Coffee bar" awards in the area for several years in a row. They will often ask us if we can roast their 'Java' a little darker or lighter than usual. Because we roast all our coffees in small batches, we can more easily tailor our roast profile. Coffee taste is as much the result of culture and tradition, as it is of the coffee's origin. South Florida is a gateway to coffee cultures: to South America, Southern Europe and the Caribbean... We are smack in the middle of this melting pot of rich coffee traditions - and you can taste it!!!
